a summer-time ice cream treat...

With today being the first day of June, it feels like summer is here!!! 

One of my favorite things about summer-time is all of the good food.

BBQ's. Fresh fruits & veggies. And my favorite... Ice Cream!! :)

So, here is my take at homemade ice cream sandwiches...

I love this idea, because you could try so many different cookie / ice cream flavor combos! 

So fun & really easy!!

Recipe for Chocolate Chip Cookie Ice Cream Sandwiches...

For these ice cream sandwiches, I baked chocolate chip cookies & allowed them to cool completely. 

Here is a good recipe for chocolate chip cookies. I used mini chocolate chips, because I wanted my ice cream sandwiches to be small. I did not use nuts in my cookies.

Next, place a scoop of ice cream on the bottom of one cookie & than sandwich it with the bottom of another cookie! I used a cookie dough scoop, to get the perfect amount. Also, I used frozen yogurt!

What a easy treat to make for warm summer day! Yumm!
