snapshots from lately

My cute doggie laying on my bed    &    planning for September... Yay!!

I have been knitting a lot more lately... This hat is for a special little girl!! :)

Last Sunday, my church had a "church in the park" day! It was perfect!

I am excited for fall, but it still feels very much like summer around here.

The simple pleasures... watercoloring fall leaves  &  eating dark chocolates...

And... taking pictures of roses  &  eating mini-muffins!!  :)

This week I decided to bake cinnamon-swirl bread!! It turned out good, but I want to try it again before I share the recipe...

homemade peach pie

Because peaches are my favorite fruit right now, I decided it was time to make a peach pie!!

Peach Pie Filling...
8-10 peaches, sliced & pealed
1/2 C. Sugar
1/4 C. Flour
1 Teaspoon Cinnamon

Peal & slice your peaches into a bowl. Carefully mix in the sugar, flour & cinnamon.
Put the peaches in the refrigerator, while you make the crust.

In my family, we always make our own pie crust!!
I find it pretty simple to make & it tastes so much better than store-bought.
So, here is the basic recipe that we always use... Just 3 ingredients!

Favorite Pie Crust...
3/4 C. Shortening 
(keep your shortening in the refrigerator for the best results)
2 C. Flour
Ice Water

Fork together the chilled shortening & flour until it resembles coarse meal.
(or you could use a food processor to pulse the shortening & flour together)
Mix in the ice water, about a tablespoon at a time, until the dough starts to combine. 
Place the dough on to a floured surface & use your hands to form the dough together.
Be careful not to overwork it.
Divide the dough into two sections & set one aside.
Roll out the first half, until it is big enough for the pie plate.
Carefully fold the dough in half & transfer it to the pie plate.
Gently fit the dough around the bottom & sides.
Trim the access dough.

Then... Roll out the second half of the dough for the top of the pie.
Pour the peach filling into the pie shell & top it with the dough.
Of course, you can cut strips or any other design you'd like... 
If you put the whole crust on top, be sure to poke holes through it for ventilation.
Brush the top with water & sprinkle with plenty of cinnamon-sugar!
Bake in a 425 degree oven, for 45-55 minutes.

locally grown produce


I can't believe we are in the middle of August already... Wow!!
Lately, I have been trying to soak up what is left of summer!
Last week, I went to a little farmer's market that is along the riverwalk, where I live...
They had some unique things for sale & of course, lots of locally grown produce.
I love fresh fruits & veggies, and it's even better when I know they were grown in my own state!
So, lately I have been enjoying lots of corn on the cob, watermelon, green & red peppers, 
AND my absolute favorite... peaches!!!!
Earlier today I made a peach pie & it turned out so good!!

At church last Sunday we sang this hymn. The words have stayed with me since then...
It is why I picked Lamentations 3:22-23 for my verses this week. 
As I have grown, I have come to see how truly faithful God is! 
When I change, He doesn't. When I am all over the place, He is always faithful. 
No matter what happens... His love is steady & true every single day.
Today, I am so thankful for that!

Trying new Lemon Tea! I love the box it came in!

I got back to work on my granny-squares after taking a bit of a break.

Sadly, it has been too hot to play much tennis lately, but last night was perfect!

Of course, there has been a lot of Olympic-watching lately...
I have really loved swimming & gymnastics!
