Sunrise... I find such joy in God's amazing creation!! I will never get over taking photos like this!

My grandma brought me a treat at work one day this week... thank you grandma! 
And... cute little Ren wearing her new dresses!

I was at the train depot this week for a senior photo shoot. Love the trains!

Love these new vintage cups!! My sister got me the one on the left.

The best way to spend a chilly fall morning... Bible study. Chamomile. Fall candle glowing. Classical music on Pandora.
And, of course, baking (& eating) soft molasses cookies (recipe here)!!

This week we definitely had a cold front come through. We even got rain! Wow!
I was actually able to wear a scarf! Fall must really be on it's way!

apple season is here!

Every fall I get excited for apple season! Over the weekend, I went to a favorite local farm to get some apples, etc... Their apples weren't quite ready to be picked yet, so we will go back to pick our own later, but they did have a little bit of jonathan & gala apples! They are so good just for eating, but I had to bake a little something with them... So, I made a French Apple Tart!!
This recipe is adapted from the book,"Plum Gorgeous". It is a simple country-style apple tart.
It was my first attempt at making a tart... I didn't have a normal tart pan, so I used a springform pan & it worked great! This recipe is for a 8-9 inch tart.

To make the Pâte Brisée or short crust dough...

1 cup flour
2 teaspoons sugar
Pinch salt
1/2 cup (1 stick) cold butter, cut into cubes
2-3 tablespoons ice water

Combine flour, sugar, and salt in a  food processor. Put the cold, cubed butter in the food processor with the flour mixture & pulse the mixture until it resembles coarse meal. Do not over mix. Of course, you could use a pastry cutter or fork too. Stir in just enough water to bring the dough together. 
Turn out the dough on to a lightly floured surface & form it in a ball. Flatten it into a disk and wrap in plastic to refrigerate for 30 minutes. 

Line your pan with parchment paper & then roll out the dough to fit into the pan. Gently form the dough around the bottom & edges. Fold excess dough over to make a thicker edge. Be sure to poke the bottom of the tart shell all over with a fork. Chill for another 20 minutes or so.


To make the apple filling...

Peel, core, & thinly slice about 4-5 apples.
Make a cinnamon & sugar mixture. 

To fill the tart shell, first sprinkle cinnamon-sugar on the bottom on the shell. Then arrange a layer of apples, fanning out in a circle, so that they overlap. Sprinkle with plenty of cinnamon-sugar. Layer more apples & cinnamon-sugar until the shell is full. Sprinkle top with cinnamon-sugar & dot with butter. 

Bake the tart until the apples are tender & the crust is golden, about 45-50 minutes. 

Warm a small amount of apricot jam, thinning it with a little bit of water to make a glaze. Generously brush the apples with the apricot glaze when the tart comes out of the oven.

Best served warm with whipped cream or vanilla ice cream!

hot air balloon festival

On Labor Day Weekend, we always go to the annual Colorado Balloon Classic! I look forward to this festival every year!! Last year, the weather was really bad on the day that we went, so the balloons were not able to fly. This year, other than being cloudy, it was perfect weather! I love to see all of the designs & bright colors... And it is always so exciting to be right in the middle of so many balloons going up all at once!

labor day weekend, part one


Saturday was my brother's birthday, so we went to Denver for a Rockies game to celebrate!! 
Unfortunately, the Rockies are having a pretty bad season, BUT they won this game!! 
There was a grand slam & in the ninth inning we caught a foul ball... Ahh! 
It was all very exciting & a really fun gift for my brother!! :)
I am so thankful that God blessed me with such a special time with my family.

On Sunday afternoon, my whole family got together for a little birthday & labor day celebration! 
We had good food & of course, fun times with this cute little girl... 

I am still going through all of my photos from Hot Air Balloon Festival. I took so many!!
So, I will share those soon...

week thirty-six memory verse


So, I am still trying to memorize The Beatitudes... And this Sunday, at church, our Sunday School lesson was all about this section of scripture! It was so great to study this deeper & understand it even more, especially since I am trying to memorize these verses right now. It seems crazy, but so many times, right when I need something God just reveals it to me. Studying this encouraged me, because honestly I have been struggling to memorize & mediate on my verses lately... I guess God was trying to tell me to keep focused on what His Word really says & just to keep at it!

a sneak peak of my weekend


This weekend was the perfect way to enjoy "the end of summer"...
For my brother's birthday celebration, my family went to The Cheesecake Factory & a Rockies game!
And this morning we woke up early for the annual Hot Air Balloon Festival!!!
...Of course, we had our traditional breakfast at Cracker Barrel afterwards!
Thank You Jesus for all of the blessings!!

My cute doggie laying on my bed    &    planning for September... Yay!!

I have been knitting a lot more lately... This hat is for a special little girl!! :)

Last Sunday, my church had a "church in the park" day! It was perfect!

I am excited for fall, but it still feels very much like summer around here.

The simple pleasures... watercoloring fall leaves  &  eating dark chocolates...

And... taking pictures of roses  &  eating mini-muffins!!  :)

This week I decided to bake cinnamon-swirl bread!! It turned out good, but I want to try it again before I share the recipe...
