homemade peach pie

Because peaches are my favorite fruit right now, I decided it was time to make a peach pie!!

Peach Pie Filling...
8-10 peaches, sliced & pealed
1/2 C. Sugar
1/4 C. Flour
1 Teaspoon Cinnamon

Peal & slice your peaches into a bowl. Carefully mix in the sugar, flour & cinnamon.
Put the peaches in the refrigerator, while you make the crust.

In my family, we always make our own pie crust!!
I find it pretty simple to make & it tastes so much better than store-bought.
So, here is the basic recipe that we always use... Just 3 ingredients!

Favorite Pie Crust...
3/4 C. Shortening 
(keep your shortening in the refrigerator for the best results)
2 C. Flour
Ice Water

Fork together the chilled shortening & flour until it resembles coarse meal.
(or you could use a food processor to pulse the shortening & flour together)
Mix in the ice water, about a tablespoon at a time, until the dough starts to combine. 
Place the dough on to a floured surface & use your hands to form the dough together.
Be careful not to overwork it.
Divide the dough into two sections & set one aside.
Roll out the first half, until it is big enough for the pie plate.
Carefully fold the dough in half & transfer it to the pie plate.
Gently fit the dough around the bottom & sides.
Trim the access dough.

Then... Roll out the second half of the dough for the top of the pie.
Pour the peach filling into the pie shell & top it with the dough.
Of course, you can cut strips or any other design you'd like... 
If you put the whole crust on top, be sure to poke holes through it for ventilation.
Brush the top with water & sprinkle with plenty of cinnamon-sugar!
Bake in a 425 degree oven, for 45-55 minutes.

  4. STOP IT. That looks amazing. I made an apple pie for the 4th of July, but nothing that beautiful. I always find pies prettier and more fun to make, but I would much rather have some chocolate something. Strange, I know.
