homemade caramel sauce with sea salt...
1 cup of water
2 cups of sugar
1 cup of heavy cream
1 teaspoon of course sea salt
pour the water into a saucepan & then pour the sugar in. turn the burner on medium heat & let the sugar dissolve. it is important that you do not stir this at all! get your cream ready, heat it in the microwave for 45 seconds, it will help to reduce lumps. once the sugar has dissolved turn the heat up to high & let it boil until it turns a golden amber color. it took about 20 minutes for me, but keep an eye on it! then slowly whisk in the cream. be careful, because it will boil more intensely. continue to boil as it thickens a bit. it will thicken more when it is all the way cooled. add the sea salt. & let it cool completely.
i put most of it in a jar to be warmed up and used for sauce. but if you put it in a baking pan lined with parchment paper and chill it, then you can easily cut pieces of the very soft caramel off, just to eat! :)
this recipe is perfect for fall, because it has a very rich & warm taste, but i do have plans to use it again to make dark chocolate covered caramels at christmas time! yay!
