'Tis the season for pumpkin everything!!! I am guilty of obsessing over pumpkin this time of year...
I love going to the store & finding all of the special Pumpkin Spice goodies that are out there.
Yesterday I bought Pumpkin Spice English Muffins & had one for breakfast this morning... so good.
I especially love the special Pumpkin Spice Kisses! If you have not tried them, you definitely should!
It is so easy to eat one after another... yikes! I knew they would be so great with Pumpkin Spice Cookies,
which would make these cookies so cute for a fall party. Oh, how I love this time of year!
Pumpkin Spice Cookies
Ingredients...
1/2 cup unsalted butter, softened
1 cup sugar
1/3 cup canned pumpkin
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose
flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
1/4 teaspoon salt
In a mixing bowl, beat the butter
and sugar together on medium speed for 2 minutes.
Add in the pumpkin and
vanilla, beat on low for 2 more minutes.
In a small bowl, whisk together the
flour, baking soda, baking powder, cinnamon, cloves, ginger, and salt.
Add it
to the butter/sugar mixture and beat on low just until combined.
Refrigerate the
dough for 30 minutes to an hour.
Preheat oven to 350 degrees.
Mix 1/2 cup sugar with a tablespoon
of cinnamon in a bowl.
Roll the dough into balls & coat each one in the
cinnamon-sugar.
Place on a cookie sheet, 2 inches apart. Bake cookies for 10-12
minutes.
Carefully remove cookies from cookie sheet & allow to cool
for a few minutes.
Eat the cookies just like this, because they are so amazing!!
OR... for something extra special press a Pumpkin Spice Kiss into the
center of each cookie!
These are perfect with a hot cup of spiced chai tea. A perfect fall treat!
