recipe: pumpkin scones (two ways)

Ingredients...
2 3/4 cups All-Purpose Flour
1/3 cup Sugar
1 tablespoon Baking Powder
3/4 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Ginger
1/2 teaspoon Nutmeg
1/4 teaspoon Coves
1/2 cup Butter (cold, cut into cubes)
2/3 cup Pumpkin Puree (canned)
2 large Eggs

 Directions...
In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and spices. Pour the flour mixture into a food processor. Cut the cold butter into cubes & put into the food processor with the flour mixture. Pulse the mixture until the butter is incorporated & the mixture looks crumbly.

In a mixing bowl, whisk together the pumpkin and eggs until smooth. Then, add the dry mixture with the pumpkin/egg mixture. Stir until the well mixed & the dough holds together. You can dump it out on to a flat, lightly floured surface & mix with your hands if you’d like.

Spray a baking sheet with cooking spray.

Divide the dough in half. Round each half so that the circles are about 3/4" thick.
Cut the circles into 6 even wedges. Place the wedges on the sprayed cookie sheet. Brush the tops with milk.

For the best texture & rise, place the prepared scones in the freezer for 30 minutes, uncovered. 
While the scones are chilling, preheat the oven to 425°F.

Bake the scones for 18-20 minutes, or until they're golden brown.
 This will make 12 scones.


How to make the Maple Cinnamon Glaze...

1-2 cups Powdered Sugar
2 tablespoons Pure Maple Syrup
½ teaspoon Ground Cinnamon
2 tablespoons Milk

Whisk all ingredients together, until smooth. 
If the mixture is to thick, add a little bit more milk. If it is too runny, add a little bit more powdered sugar.
Spread the glaze all over the tops of each scone. Allow the glaze to set up before serving. 


I made the other half of these pumpkin scones with mini chocolate chips, just for a little bit of variety...
I mixed about 1/2 cup of mini chocolate chips into the dough by hand. And did everything else the same.
The maple glaze is a favorite in my house, but of course, the ones with the chocolate chips were good too!!
